Gluten Free Rice Krispies Crunch Coating for Meat



Utensils needed:


Food processor or a cup and a bowl
Three plates
Two large bowls
A whisk

AND EITHER

A frying pan & a long handled utensil or two
or
A tinfoil covered oven pan (cookie sheets work just fine--tinfoil is optional, but recommended)



Ingredients needed:


5-7 pieces of meat (I've tried fish and chicken, you could use whatever you would like)
3 cups Gluten Free Rice Krispies (these are worth buying for this, believe me--and do beware that normal rice krispies are NOT gluten free, they have barley malt in them.)
1 cup dehydrated parmesan cheese
2 tablespoons of jalapeno juice (you could use pickle or lemon juice, or ignore this ingredient)
2 tsp salt (or more, this is to taste)
2 tsp pepper (or more, this is to taste)
1 large egg
8-10 tablespoons of cornstarch

This recipe has two choices: 
FRIED or BAKED

Your choice of meat may make you want to chose a certain method, but it will work either way--it just may require you to fry some things longer or cut them into smaller pieces. 

If you're frying your meat, then you also need enough oil (I used olive oil, you could use something different if you would prefer) to cover the bottom of your frying pan.

  • Unless it's fish, frying seems to be best with defrosted meat.
  • If you're making thin strips of meat or are using fish, I suggest frying. 

The best part of frying is that it's FAST--but it requires constant attention.
Ready to fry?
- Prepare your pan--do not turn it on yet, though.


If you're baking your meat, then you will need some tinfoil to cover your pan. This is not necessary, but it expedites cleanup immensely and makes for a great cooking surface.

  • Baking can be done with defrosted or frozen meat. I find cooking a chicken breast this way from frozen is great because the center is juicy and the outside is crispy when finished.
  • Full portions of meat (like a chicken breast or a pork chop) seem to be best baked in the oven.

The best part of baking is that you can choose the size of your portions (like a full chunk or strips of meat)--but it takes TIME to cook.
Ready to bake?
- Cover your oven safe pan or cookie sheet with tinfoil
- Preheat oven to 425 degrees Celsius, set rack to center of oven

THE BREADING:
  • Put the Gluten Free Rice Krispies into a food processor and then into large bowl. If you do not have a food processor, take the bottom of a cup and crush them in the bowl until they are broken into small pieces. Add parmesan cheese, salt and pepper in with the crushed Krispies and stir well. In separate bowl, whisk the egg until it is all mixed together. Add the jalapeno juice to the beaten egg and stir again. On a plate, spread out the cornstarch. 
  • Rinse your choice of meat and place on a plate.
  • Take a piece of meat, roll it in the cornstarch until it is covered. Next roll it in the egg mixture, allowing to drain for a moment before then rolling in the Krispies mixture. Place on a plate (or onto your tinfoil pan if you are baking them). Repeat for all pieces of meat.
  • If there is Krispie mix remaining, you can either sprinkle it on top of your meat or discard it.

From here it depends on what method you chose.

BAKING:
  • Place your prepared meat into the oven.
TIMES: 
(Readers please note that these are all approximate, be sure to check your creations and do not remove until all juices run clear. Feel free to chop one in half to be sure that they are ready, or add additional time to get a crispier coating.)

SMALL DEFROSTED PIECES: 25-30 minutes in preheated oven.
SMALL FROZEN PIECES: 35-45 minutes in preheated oven.
MEDIUM DEFROSTED PIECES: 45-55 minutes in preheated oven
MEDIUM FROZEN PIECES: 60-70 minutes in preheated oven
LARGE DEFROSTED PIECES: 55-75 minutes in preheated oven
LARGE FROZEN PIECES: 75-95 minutes in preheated oven

FRYING:
  • Preheat your oiled pan. Be sure that the oil is very hot but not spattering or smoking. Depending on the size of your pan and portions, you may wish to do the following in stages and not all at once.
  • Lay prepared strips of meat into hot pan. Leave for two minutes, then turn at least once. You can cook all four sides if you wish (this is recommended if you have large pieces or like a golden coating all around your strips of meat).
  • Remove from pan and set aside--do next batch until all of your meat is cooked to your satisfaction.
*Note: If you're trying to fry a whole chicken breast from frozen, this is going to take far longer than two minutes. You may wish to invest in a lid for your pan.

FOR NON-DAIRY: Use an egg substitute if preferred or necessary.
Use any other ground, dried up ingredient you'd fancy besides the parmesan cheese--or simply forgo this ingredient and add an extra cup of Gluten Free Rice Krispies instead.
