Cod, Rice & Broccoli
Utensils needed:
Two medium size pots with lids
Cutting board & knife
Flipper
Ingredients needed:
2 large pieces of frozen fish (I used cod, you could use whatever you would like)
3 tablespoons of lemon juice (I used lemon juice, you could use any liquid you would like)
1 1/2 tbs of olive oil
2 teaspoons of butter or margarine
1 teaspoon of minced garlic
1 tsp of salt or to taste (beware some fish is naturally salty)
1 tsp of pepper or to taste
2 cups rice, 4 cups water (*this may vary depending on what rice you choose!)
2 teaspoons of butter or margarine
a few cherry tomatoes (or whatever garnish you have available)
3-4 cups of broccoli (2 medium sized stalks)
- Read directions on your rice and cook accordingly--the rice I used required 2 cups of rice 4 cups of water and 2 teaspoons of butter or margarine. This is brought to a boil then turned down to low heat and lidded for 15 minutes, then took it off the heat to stand for 5 minutes before 'fluffing with a fork and serving'.
- Set your frying pan on med-high and drizzle in olive oil. Add salt, pepper & lemon; lay fish flat and put on the the lid.
- Chop broccoli (if necessary) and place steamer in the bottom of the second medium sized pot. Add water until just under the bottom of the steamer, then add broccoli. Turn element on to high and put the lid on the broccoli.
- Watch for when broccoli for when it begins to boil, turn heat down to medium and allow to cook for 6-10 minutes before shutting off and removing from heat.
- Flip the fish after 5-7 minutes cooking on one side. (9-11 minutes if you have frozen fish.) They usually only require another 5 minutes before they are cooked after the first flipping, frozen or not--but be sure to check before you take them out of the pan.
- Plate, add garnish and serve.
FOR NON-DAIRY: Substitute the butter/margarine for 1 teaspoon of cooking oil or forgo this ingredient.
