Chef's Salad

Chef's Salad

Utensils needed:

Small to medium sized pot
Pan and a flipper
Cutting board/sharp knife
Large bowl

Ingredients needed:

4 hard boiled eggs, sliced and shells removed
½ head of romaine lettuce, torn or cut in to bite size pieces
½ head of iceberg lettuce, torn or cut in to bite size pieces
1 large tomato, diced
1 stalk of celery, diced
2 slices of red onion, diced
½ cup cheese, cut into small cubes (I used aged cheddar, you could use whatever you would like)
1/4 of a cup of grated Parmesan cheese (I used Parmesan cheese, you could use whatever you would like)
A handful (3-4 tablespoons) of gluten free bacon bits

8 baby russet potatoes, cut into eighths (I used baby russet potatoes, you could use whatever you would like)
2 tbs of olive oil (I used olive oil, you could use whatever you would like)
1 tsp of salt & pepper (may need more or less depending on taste)
2 tsp of Italian spices
2 tsp of garlic salt (or minced or dehydrated garlic)

  • Fill the pot halfway full with cold water. Place the eggs carefully into the pot and set to boil. Eggs usually float when they are finished, but eight minutes at a high boil should be plenty.
  • Chop potatoes into small, bite sized pieces.
  • Set your oven to broil or your frying pan to medium high. Spread garlic salt and potatoes out in the bottom of the pan.
  • Sprinkle salt, pepper, Italian spices over potatoes. Drizzle oil evenly over top and stir until all of the potatoes are coated.
  • Put in oven for ten minutes on high broil, stir, and repeat until potatoes are golden brown and crispy on the edges. If using a frying pan, stir often and keep under a lid until potatoes are golden brown. *You may need additional oil if using the frying pan method.
  • Chop/tear up both kinds of lettuce and place in large bowl.
  • Dice red onion, celery, and tomato. Peel and chop hard-boiled eggs. Grate/cube cheeses--add all ingredients to the bowl.
  • Add bacon bits and potatoes. Stir well and serve immediately.

FOR NON-DAIRY: Substitute the cheese for berries or nuts. If you cannot eat or do not like egg, substituting for a cooked meat (like ham or chicken) works well. If you do not like meat, forgo the bacon bits and the egg in favor of radishes or soy tofu. Enjoy!
